Cheese Freeze
Cheddar can be frozen but some of its moisture will be drawn out. This does not change the flavour but it does affect the texture. For this reason, once cheddar has been frozen it is best suited for cooking.

Moldy Cheese
Mold on cheese is usually a sign of humidity. Mold may develop on the surface of cheese. Simply cut away 1/2 inch of cheese on all sides of the visible mold and use the rest.

Cheese with Holes
The most recognizable characteristic of Swiss cheese is its holes, which punctuate the pale yellow exterior. These holes, also called eyes, are caused by the expansion of gas within the cheese curd during the ripening period.

Storing Cheese
The best way to store hard cheese like cheddar is to leave it in the original wrapper. Over wrap it in plastic wrap or place it in a plastic container after opening it.
