Prime Rib Sauce
Yield: 16 - 2 oz. servings
16 oz. Cream Cheese, softened
16 oz. Sour Cream
1/4 cup Dijon Mustard
2 tbsp. Horseradish
Mix all ingredients together with an electric mixer until well blended. Salt and pepper to taste.
Chill and serve alongside the prime rib for dipping. This sauce is also great as a baked-potato topper.

Gouda & Chive Mashed Potatoes
Yield: 24 - 8 oz. servings
12 lbs. Fresh Mashed Potatoes
2 lbs. Gouda, shredded
4 oz. Butter, melted
1 tbsp. Salt
2 oz. Fresh Chives, chopped
2 tsp. Paprika
In a large mixing bowl, fold in Gouda, melted butter, salt, and pepper into mashed potatoes. Fold in chives, being careful not to overmix. Heat the mixture in a steam kettle or large saucepan until hot.
