The Quality Process
In keeping with Hazard Analysis Critical Control Point (HACCP) guidelines and government foodservice regulations:
- We employ a HACCP program as a means of providing a wholesome food supply.
- An extensive product-recall plan is in place to ensure an immediate response time to minimize risk to customers should the need arise.
- Suppliers of Gordon Food Service® brand products are required to provide annual third-party audit reports to verify that their food-quality, safety, and security systems meet regulatory and industry standards.
- Our routine quality assurance sampling and testing program ensures consistent quality.
- Specially trained receivers inspect loads for damage, correct temperatures, and product integrity.
Tools for Quality Control
- Each distribution center has a master sanitation schedule with routine inspections to verify its effectiveness. We utilize licensed pest control companies that service our centers every two weeks.
- A temperature integrity system is in place so that proper refrigeration and freezer temperatures are maintained in the receiving, storage, and shipping areas. Our automated continuous monitoring system has both internal and external alarms monitored by an outside security company 24 hours a day. Temperatures are also manually monitored daily to verify system accuracy.
- Our trailer loading process ensures temperature integrity. The freezer storage area in each Gordon Food Service trailer is separated from refrigerated and dry products by an insulated bulkhead. There are separate refrigeration units for the freezer and for the area where refrigerated products are stored to maintain proper temperatures. Insulated curtains provide a barrier between interior and exterior temperatures when trailer doors are open.
