Halperns' Faroe Islands Salmon
- 2 ct. Salmon Fillets, 4 oz. each
- 1/2 c. Gordon Signature Tropical Rum Glaze
- 3 tsp. Mangoes, diced
- 1 tsp. Jalapeños, diced
- Salt, to taste
- Pepper, to taste
- 4 oz. Grilled Vegetables
Wash hands. Wash all fresh, unpackaged produce under running water. Drain well.
1) To make the mango salsa, combine the diced mangoes and the diced jalapenos. Add salt and pepper to season. You may also add a little bit of citrus (orange, lemon, or lime juice) for an extra bit of flavor.
2) Lightly season the salmon with salt and pepper before placing on the grill, skin side up. Spray the grill with pan coating spray to ensure the salmon does not stick. When the salmon starts to pull away from the grill, flip the salmon. Begin to baste with the tropical rum glaze. When the salmon is finished cooking, place on bed of grilled seasonal vegetables and top with the mango salsa.
